Ingredients:

  • 500 g beef stew meat (or use leftover roast beef)
  • 2 tbsp butter
  • 2 tbsp flour (plus extra for coating)
  • 1 small onion, finely chopped
  • 500 ml beef stock (or broth)
  • 1 tsp mustard
  • 1 tsp soy sauce
  • Salt and pepper, to taste
  • 1 egg (for coating)
  • Bread crumbs, for coating
  • Fresh parsley (optional)

Instructions:

Make the Beef Filling:

  • In a large pot, melt the butter and sauté the onion until soft and golden.
  • Add the beef stew meat (cut into small pieces if using leftover roast beef) and cook until browned.
  • Stir in the flour and cook for about 1-2 minutes to form a roux.
  • Gradually add the beef stock, stirring continuously, until the mixture thickens to a ragout consistency. Add the mustard, soy sauce, salt, and pepper to taste. Let it cook for about 10-15 minutes until the filling has thickened.
  • Remove from the heat and let the filling cool. You can place it in the fridge to speed up the cooling process if needed.

Shape the Bitterballen:

  • Once the filling has cooled, use your hands to shape it into small, bite-sized balls (about 1-inch in diameter).
  • Roll each ball in flour, then dip them in the beaten egg, and finally coat them with bread crumbs. Repeat the process for all the bitterballen.

Air Fry the Bitterballen:

  • Preheat your air fryer to 180°C (350°F).
  • Lightly spray or brush the bitterballen with oil to ensure a crispy exterior.
  • Place the bitterballen in the air fryer basket in a single layer, ensuring they aren’t overcrowded.
  • Air fry for about 8-10 minutes, turning them halfway through until golden brown and crispy.

Serve:

  • Serve your bitterballen hot with mustard on the side for dipping. Garnish with fresh parsley if desired.
