Vodka Gnocchi

Ingredients

  • 1 brown onion
  • Vegan butter
  • ½–1 tsp chili flakes (optional)
  • 3 cloves garlic, grated
  • 100 g tomato paste
  • 400 g Italian chopped tomatoes
  • 250 ml water
  • 160 ml vegan oat cream
  • 60 ml vodka
  • 800 g gnocchi
  • 60 g vegan mozzarella or other vegan cheese
     

Preparation

  1. Chop the onion and add it with a knob of butter to the inner pot. Select Sauté on the Duo Crisp with Ultimate Lid and set to medium/low (level 2).
  2. Sauté the onion until translucent, about 5 minutes.
  3. Add chili flakes, garlic, tomato paste, chopped tomatoes, and water, then stir.
  4. Place the pressure cooking lid, close it, and select Pressure Cook for 15 minutes.
  5. When finished, perform a quick release.
  6. Stir the vegan oat cream into the sauce until smooth and creamy.
  7. Stir in the vodka and season with salt and pepper.
  8. Add the gnocchi directly to the sauce and stir so everything is coated.
  9. Select Sauté again, let the gnocchi simmer gently for 1 minute, then stop stirring and sprinkle cheese on top.
  10. Remove the pressure cooking lid. Close the lid in Air Fry mode and set to 190 °C for 5 minutes.
  11. Cook until the cheese is lightly browned and melted. Spoon into bowls and serve immediately.
