Vodka Gnocchi

Ingredients
- 1 brown onion
- Vegan butter
- ½–1 tsp chili flakes (optional)
- 3 cloves garlic, grated
- 100 g tomato paste
- 400 g Italian chopped tomatoes
- 250 ml water
- 160 ml vegan oat cream
- 60 ml vodka
- 800 g gnocchi
- 60 g vegan mozzarella or other vegan cheese
Preparation
- Chop the onion and add it with a knob of butter to the inner pot. Select Sauté on the Duo Crisp with Ultimate Lid and set to medium/low (level 2).
- Sauté the onion until translucent, about 5 minutes.
- Add chili flakes, garlic, tomato paste, chopped tomatoes, and water, then stir.
- Place the pressure cooking lid, close it, and select Pressure Cook for 15 minutes.
- When finished, perform a quick release.
- Stir the vegan oat cream into the sauce until smooth and creamy.
- Stir in the vodka and season with salt and pepper.
- Add the gnocchi directly to the sauce and stir so everything is coated.
- Select Sauté again, let the gnocchi simmer gently for 1 minute, then stop stirring and sprinkle cheese on top.
- Remove the pressure cooking lid. Close the lid in Air Fry mode and set to 190 °C for 5 minutes.
- Cook until the cheese is lightly browned and melted. Spoon into bowls and serve immediately.
