Instant Pot Melting middle stacks for Christmas dinner
Melting Middle Stacks

Ingredients:
- 340 g ready-made pork or chicken stuffing
- 50 g brie
- 1 kg baby potatoes – all similar in size
- 5 g / small handful of sage, finely chopped
- 50–70 g sliced turkey
- Cranberry sauce, to serve
- Oil, salt, and pepper as needed
Tip: choose a bag of evenly sized baby potatoes so they cook evenly and look uniform when served
 
Method:
- Count the potatoes — this will tell you how many brie cubes and stuffing balls you’ll need.
- Wash the potatoes and place them in a pan with cold salted water. Boil over medium heat until tender and easily pierced with a knife.
- While the potatoes cook, place the ready-made stuffing in a medium bowl and add the sage.
- Cut the brie into small cubes, based on the number of potatoes. Divide the stuffing into the same number of portions and shape into balls around each brie cube.
- Once the potatoes are cooked, place them on a chopping board or flat surface. Use the bottom of a cup or mug to flatten them to about 1 cm thick. Do not over-smash, or you’ll get mashed potatoes.
- Ensure the central divider is in place in your Versa Air Fryer basket. Add the cheese-filled stuffing balls to one side and lightly spray with cooking oil. Place the potatoes on the other side, season, and drizzle with oil.
- Activate the dual-zone cooking system. Select Air Fry at 195°C for 20 minutes for the potatoes. Select Grill at 205°C for 4 minutes for the stuffing balls.
- Before pressing start, press Sync Cook so both sides finish at the same time. No preheating required. Press start.
- Flip the potatoes halfway through cooking and drizzle with more oil if needed.
- Remove the stuffing balls and crispy potatoes. On a serving board, place the smashed potatoes, top with a slice of turkey, then a melting middle ball, and finish with cranberry sauce. Serve immediately while warm.
- Make ahead: To save time on Christmas Day, you can cook and smash the potatoes up to 2 days in advance, and prepare the stuffing balls. Simply cook when ready to serve.
