How to cook perfect entrecôte using the Sous Vide function in your Instant Pot

Craving a perfectly cooked steak without fancy equipment? If your Instant Pot has a Sous Vide function, you already have everything you need to prepare tender, juicy entrecôte with a golden crust,  all in one appliance.

This simple recipe brings out the rich flavor of beef with just a few ingredients. The fresh sage adds an elegant herbal twist, while your Instant Pot takes care of the precision cooking and final sear.

Ingredients

  • 2 entrecôte steaks
  • Salt, to taste
  • Black pepper, to taste
  • Fresh sage leaves
  • A drizzle of olive oil or butter

Equipment

  • Instant Pot with Sous Vide function
  • Heat-safe cooking bags (like zip-top freezer bags that can handle sous vide temperatures)
  • Tongs or silicone spatula

Preparation method

1. Preheat with the Sous Vide function
Fill the inner pot of your Instant Pot with water and select the Sous Vide setting. Set the temperature to 55°C for a medium-rare result. Close the lid (without sealing) and let the water come to temperature.

2. Prepare the steaks
Season both sides of the entrecôte with salt and pepper. Add a few fresh sage leaves and a light drizzle of olive oil or butter.

Place each steak in a zip-top freezer bag and press out the air using the water displacement method (lower the bag slowly into the preheated water, then seal).

3. Cook sous vide
Once preheated, place the sealed bags in the pot. Make sure they’re fully submerged and not overlapping. Cook for 45 minutes to 1.5 hours, the result stays consistently tender.

4. Sear in the Instant Pot
When the steaks are done, remove them from the bags and pat them dry with paper towels, this step is key for getting a nice crust.

Empty the water from the Instant Pot and dry the inner pot. Switch to the Sauté setting and let it preheat. Once hot, sear the steaks directly in the pot for about 1 minute per side, using tongs or a spatula to turn them. Add a small knob of butter if you’d like extra richness.

5. Serve and enjoy
Let the steaks rest for a minute, then slice and serve. Pair with roasted vegetables, mashed potatoes, or your favorite Instant Pot side dish.
