            Another great recipe to try at home! This week we’re bringing you not one, but two of @KerryWhelpdale’s favourite family Christmas dishes!!
A cola-soaked gammon, followed by cauliflower cheese — all made in the Instant Pot Duo Crisp with Ultimate Lid.
Recipe(s):
Cola-Soaked Gammon:
Ingredients:
- 1.5 kg unsmoked boneless gammon joint
- 2–3 L full-fat cola
- Equal parts maple syrup and wholegrain mustard
- 2 white onions, chopped
- 2 celery sticks, chopped
- 4–5 carrots, chopped
 
Method:
- Add half the chopped onion, celery, and carrot into the cooking basket, then place the gammon joint on top.
- Add the remaining chopped vegetables into the basket and lower it into the inner pot.
- Pour in the cola until it reaches the max fill line or until the joint is fully submerged (whichever comes first).
- Secure the pressure cooking lid, lock in place, and select Pressure Cook. Set the time to 40 minutes with quick pressure release.
- While the gammon cooks, prepare the glaze by combining the maple syrup and wholegrain mustard in a small bowl.
- Once the program finishes, unlock the lid and drain away the liquid.
- Brush the glaze over the gammon, remove the pressure cooking lid, and close the crisping lid.
- Select Air Fry at 200°C for 5 minutes.
- When done, let the gammon rest before slicing.
 
Cauliflower Cheese
Ingredients:
- 1 cauliflower, broken into florets
- 50 g butter
- 4 tbsp plain flour
- 2 tsp mustard powder
- 500 ml milk
- 100 g mature cheddar cheese, grated
 
Method:
- Add the cauliflower florets with 500 ml water into a clean inner pot and secure the lid.
- Select Pressure Cook and set the time to 1 minute with quick release.
- Once cooked, remove the cauliflower from the inner pot and drain the water.
- Select Sauté and add the butter and flour, stirring to combine. Gradually add the milk, whisking continuously until smooth.
- Add the cheese, stir to combine, then fold in the cooked cauliflower florets.
- Remove the pressure cooking lid and secure the crisping lid.
- Select Grill at 204°C for 4 minutes.
- Once golden and crispy on top, serve and enjoy!
