Who needs takeout when you can have a finger-licking Fakeaway in the comfort of your own home, ready in 30 minutes? Serve this famous Chinese recipe with salt and pepper thick-cut chips from the air fryer for the ultimate Fakeaway night.
 

INGREDIENTS

  • 6 chicken wings, halved
  • 1 bulb of garlic
  • 3 lemongrass stalks, finely chopped
  • Pinch of salt, white pepper & sugar (for frying garlic and lemongrass)

The Marinade

  • ½ tsp five spice
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 1 tsp sesame oil
  • 1 tbsp Shaoxing rice wine

The Batter:

  • 100 g cornflour
  • 1 ½ tsp bicarbonate of soda

Quick Sweet Chili Sauce:

  • 3–4 cloves garlic
  • 4–5 large red chilies
  • 1 tbsp premium light soy sauce
  • 5–6 tbsp rice vinegar
  • 120 g sugar
  • 2 tbsp water
     

INSTRUCTIONS:

  1. Mix the marinade ingredients with the chicken wings. Then add the batter ingredients on top and mix well.
  2. Place the wings in the Vortex Air Fryer with space between each piece. Spray the wings with oil, select Air Fry, and set the temperature to 200°C and the time to 25 minutes.
  3. Turn the wings when prompted to “turn food.”
  4. While the wings are air frying, cook the sweet chili sauce ingredients in a sauté pan on your Instant Pot until they reach a light, jam-like consistency.
  5. Then, in a wok, fry the garlic and lemongrass until crispy and golden brown. Strain through a sieve onto kitchen paper.
  6. Season the wok ingredients, and when the wings are cooked, toss them through the fried wok mix and serve with the sweet chili dipping sauce.
